Course Content & Assessment

At GCSE the students follow the AQA examination course concentrating on theory and making skills in year 10 and the coursework and revision in Year 11.

Food and Cookery – VCert - NCFE

Subject Information – This is a new course still in draft format, and will only run if a suitable cohort in terms of numbers and ability make it viable.
This qualification is intended for learners aged 14-16 years who wish to learn about food preparation in a commercial environment.

Students will learn how to;
Prepare self and environment for cooking
Food functions in the body and in recipes
To modify recipes for health for a balanced diet
To assess a diet and make recommendations
To plan and produce dishes for a purpose
This VCert in Food and Cookery will help learners develop the knowledge, skills and experience and could potentially open the door to a career in related industries.

Skills demonstration
What will learners study?
Learners complete four mandatory units across 120 guided learning hours
Unit 1 – preparing to cook, safe and hygienic preparation of cooking ingredients and environment, safe storage of ingredients. How to follow a recipe to demonstrate cooking skills and to produce a variety of dishes successfully
Unit 2 – Understanding food – to understand the sources of food and where they come from. Factors which affect our choice of food and how to select dishes to prepare and cook food successfully
Unit 3 – Exploring balanced diets and individual requirements. RI’s and GDA’s . Food labelling and how to adapt recipes for health (exam unit – 2hours)
Unit 4 – plan and prepare dishes in response to a brief. Brings together all of the learning – students design a menu in response to a brief in which they plan, make and review suitable dishes
